Yacon (yacon, Smallanthus sonchifolius) is a tall green plant related to the sunflower that grows in the South American Andes. It blooms into small yellow flowers and its underground parts are used as food. The roots are crunchy, rich in water and have a pleasant sweet taste. Slices of yakone root are dried and processed into a powder. It consists mainly of inulin, a soluble fibre that does not raise blood sugar levels. One tablespoon of yakone powder (15 g) has an average of 56 calories.
