Coconut syrup is an excellent sugar substitute with a low glycemic index. It is an all-natural liquid sweetener with a thick consistency and a delicious caramel taste. It can be used in hot and cold cuisine to sweeten dishes and drinks, giving them a unique exotic flavour.

Coconut syrup is a 100% natural fragrant sweetener that is made from the nectar of the coconut palm tree flowers. Thanks to them, it carries a sweet caramel taste with hints of exoticism. Its advantage is its natural mineral content and low glycemic index -approximately GI 35. By comparison, beet sugar has a GI of 68.

What the glycemic index shows us

The glycemic index (GI) is a numerical value that ranks carbohydrates based on their glycemic response rate (i.e., their conversion to glucose in the human body). This also determines the production and release of insulin from the pancreas into the blood.

The glycemic index uses a scale from 0 to 100. Foods with GI values above 70 cause a rapid rise in blood sugar, which the body tries to lower by flushing out insulin. This can cause blood sugar levels to drop even lower than they were originally, leading to feelings of hunger or cravings for sweets. This often leads to further consumption of high GI foods.

To minimise this effect, it is advisable to choose foods with a lower GI (below 55).

This sweetener is a suitable alternative to refined sugar with a really wide range of uses. It is suitable for both hot and cold dishes. Due to its viscous consistency, it is often used in vegan cooking as a substitute for honey.

The story of coconut syrup

Coconut syrup has been used as a sweetener since time immemorial in Southeast Asian countries such as Thailand, the Philippines and Indonesia. Locals especially appreciate its composition and the unmistakable taste of coconut flowers.

How coconut syrup is made

First of all, the nectar obtained from the cut flowers of the coconut palm(Cocos nucifera) must be collected. This is then gently heated to evaporate the water, producing coconut sugar, which is then mixed with water again to form coconut syrup. The finished syrup has a golden colour, a thick consistency and a caramel taste with undertones of coconut.

Our coconut syrup is produced in the traditional way in accordance with the principles of organic farming. The trees grow in unpolluted soil and are not chemically treated. It is an all-natural sweetener of organic quality. It has a thicker consistency, darker colour and stronger taste than the light version of the syrup, which undergoes a longer filtration process. Thanks to the gentle production and processing method, it retains its uniquely rich taste and original quality of composition.

Sweeten in moderation

Although natural syrups are a preferable alternative to white sugar, they still remain a rich source of simple sugars and it's not a good idea to overdo it.
